Hungry? Dinner in 30-40 minutes!

Are you looking for a tasty, healthy, and quick dinner that will satisfy and energize you? Look no further! This recipe even offers easy jobs for children to help prepare the meal and gives them choices of what to eat. What a winning combination for kids!

HAWAIIAN HAYSTACKS

Start by cooking your favorite rice.  For a family of 4, we cook 3 cups of Calrose rice which takes 20 minutes plus 10 minutes of “steaming of the heat”. Just follow your rice recipe.

Make a gravy for your meat (2 cups of bite-sized ham or home-cooked chicken or 2 (10-12 oz.) cans of chicken).  The gravy can easily be made with 2 small cans of cream of mushroom soup and 2 soup cans of water. Add 2 teaspoons Worcestershire sauce and warm soup mixture with meat.

My preferred gravy is to melt 1/4 cup (1/2 square) of real butter. Whisk 1/4 cup flour into butter then slowly add 2 cups water. Be careful when adding the flour to keep heat medium to medium high and stir constantly with a whisk so the flour doesn’t burn or stick. Add 2 tsp. dry chicken bouillon and salt and pepper to taste. I like to add 1 tsp. of poultry seasoning (optional). Add meat and warm through.

In the meantime have the kids help put any of the following items you like in bowls. Shredded cheese, mandarin oranges, chopped green peppers, peanuts, chopped green onion, sliced almonds, chopped mango, sliced bananas, raisins, chopped sweet pickles, chopped celery, pineapple, and slightly thawed frozen peas are all good. Additional toppers are crispy rice noodles or chow mein noodles. My 10-year-old son had fun putting the toppings in color-coordinated bowls! The strawberries didn’t go on the haystacks. They were just for dessert!

Layer rice on your plate, put the gravy/meat mixture on next and then choose the toppings that you like the best. Don’t be afraid to be adventurous! My husband was surprised that the sweet pickles went well with his other haystack choices. Be careful not to build too big of a haystack! They are very filling. Enjoy!

      Thanks for your comment! I love this free WordPress platform, and it’s easy for someone like me who isn’t too computer-savvy! As far as tips for aspiring writers, I am one myself! I love writing for my blog, and I’m also working on picture books for children. I have 3 tips for you. 1: Keep a list of topics that interest you and that you would like to write about. Do a little research and add your own thoughts. 2: Pace yourself to write on a time schedule that fits your lifestyle. You can save drafts and post on the day you want it published. 3: Run an article by a trusted friend or family member before publishing it. GOOD LUCK AND HAVE FUN!
