Easy Broccoli Potato Soup

A hearty soup with no MSG because it’s homemade! All 6 of my kids love this soup!

3 cups boiling water                                    1/2 tsp. garlic salt

3 med. potatoes, cut bite-sized      2 cups broccoli tops, cut bite-sized

2 tsp. chicken bouillon                   3/4 cup milk – regular, soy or almond

1 Tblsp. dried minced onion            2 Tblsp. water + 2 Tblsp. cornstarch

dash ground pepper, optional          1/2 cup shredded cheddar cheese

Boil potatoes and minced onion for 10 minutes in large saucepan with lid on. Add bouillon, pepper, garlic salt and broccoli. Boil for approximately 5 minutes. Do NOT overcook the broccoli. It should stay a vibrant green. Turn to low. Add water and cornstarch that has been mixed together well (whisk or shake in cup with a lid). Add milk and cheese. Be careful to keep on low heat to melt cheese. If it boils, the milk will curdle. Garnish with additional cheese if desired.  Enjoy! Serves 4-6.
